A HARDY KETO SALAD!

The Cobb Salad remains my all time favourite salad. I love how versatile and hardy the Cobb Salad can be and I always feel perfectly full when I’m done. 

INGREDIENTS 

Ranch Dressing

You can’t have a cobb salad without Ranch dressing. You just can’t!

Lettuce

You can most definitely substitute your lettuce for any of your choice faves. I actually usually make my cobb salad with fresh, watery and crispy Iceberg lettuce. For this variation however, I had some arugula I needed to finish, so I just popped it in instead.

Tomatoes

You have to use cherry tomatoes in a cobb salad. You can substitute for any regular tomato, but the sweet and tangy taste of the cherry tomato is just the perfect and undeniable choice.

Chicken

I never use a full chicken breast in my salad. It’s just too much.

Toss It or Plate It?

When I’m feeling up to it, I really like to place all of my ingredients in lines and drizzle the dressing on top. After that, you try to scoop all the ingredients in one to get the perfect bite!

INGREDIENTS
  • 1/2 cup of cucumbers

  • 1/4 cup of cherry tomatoes

  • 1/2 avocado

  • 1 cup of arugula

  • 1/2 chicken breast, cooked

  • 1 hardboiled egg

  • 2 tbsp of ranch dressing

  • 1/4 cup of feta cheese, cubbed or crumbled

  • Bacon bitts (optional)

GUIDE / INSTRUCTIONS
  • Chop the cucumber, slice the cherry tomatoes and cube the avocado.

  • Slice of cube the chicken, slice the hardboiled egg and crumble the feta cheese.

  • Plate all the ingredients separately or just toss all the ingredients together in a bowl.

  • Add the ranch dressing.
